Skinny Mexican Pie Recipe (6 Weight Watchers Points Plus)


I took a Mexican pie recipe and skinnied it up for those of us on Weight Watchers. This is 6p+ for 1/8 of the dish, or 12p+ for 1/4 of the dish. Lick the bowl good and worth every point!

  • 1 lb 90% lean ground beef
  • taco seasoning
  • 15 oz can of corn
  • 8 oz can of tomato sauce
  • 1 low card tortilla
  • 3/4 c shredded cheese (could use reduce fat)
  1. Preheat your oven to 375F and brown your ground beef on top of the stove.
  2. Add in taco seasoning and follow the directions, mine needed 3/4 cup of water and to skimmer for 5 min.
  3. Spread taco meet in the bottom of your dish and top with corn and tomato sauce.
  4. Slice your tortilla into strips.
  5. Place your tortilla strips on top so that it looks like it grid.
  6. sprinkle your cheese over the top.
  7. Bake for 20 min on 375 or until cheese is melty.
  8. EAT!

2013 versus 2014, was down 30 pounds in that photo (now down 40). We wore the same clothes just to be funny and see if we could see any changes in a year. Yes that IS a Fitbit Flex on my arm, LOVE IT!
