Babybel Bites Recipe (5 ww p+)

I've been eyeing the little Laughing Cow Mini Babybel cheese, but had yet to try them. I found a $1 off coupon for them on and decided to take the plunge. Reg $2.98 at my Walmart, I paid $1.98 each after coupon and bought two of the little bags of them.
There weren't very many of them, and there are 5 of us, so I decided to make them stretch by slicing them in 1/2 and using them in a recipe. They turned out DELISH! They're like little round mozzarella sticks, only healthier and with pizza crust on the outside. Everyone in the house LOVED them.
You need:
  • Laughing Cow Original Mini Babybel Cheese (You could buy light, I don't like light cheese)
  • Whole wheat pizza crust
  • Garlic powder
  • Non-stick cooking spray
  • Pizza sauce for dipping
  1. Preheat your oven to 425 and spray your pizza pan with non-stick spray.
  2. Start by slicing them in half so that you have 2 circles, not 2 half circles.
  3. Wrap a small amount of whole wheat pizza crust around them and arrange them on your pan.
  4. Sprinkle with garlic powder.
  5. Bake at 425 for 5-7 minutes.
  6. Enjoy with pizza sauce.

The recovering junk foodie in me wanted to brush butter on the top of them before baking, but I controlled myself. If you make them they way I did (minus butter and with original cheese not light), they come out as 5 Weight Watchers Points Plus points for three of them.

Brazos Drive-In Theater in Granbury, TX

So I bought a $10 Groupon to the Brazos Drive-In Theater and we made a daytrip out of it. We went to the dino state park in Glen Rose, TX. For $14 the kids got to see some dino tracks and swim in the stream.

We ate junk food at McDonalds. It was 107 F outside and McD did not have their AC on. Gross food lol with gross heat. Next we went to the drive-in. Gates opened at 8pm and we were the first in line. At 9pm it was dark and the movie started. Was FUN! Did spend a good $30 at the snack bar... glow sticks, pixie sticks, popcorn, drinks, water, nachos, hot dog.... BUT it was so worth it. Love spending time with the kids making memories.

What I Do WIth My Weight Watchers Weight Trackers

I'm in a new Weight Watchers tracker this week whoop whoop. I always decorate mine for the following reasons:

  1. It's pretty. A pretty diet tracker just seems better to use. Don't ask me why, but I'm sure it is a scientific fact or something. :) Pretty = More Fun.
  2. I stand out. When I pulled out the yellow one week after week, the receptionists would ALWAYS remember me. They say something like "the yellow tracker again, or the artist loses again." I weigh in at a Weight Watchers store that gets hundreds and hundreds of people weighing in each week, and I am remembered. I like that, because it makes me feel more connected when people recognize you, and remember you.
  3. I feel like I am giving 100%. I put in the effort to decorate my tracker, because I am serious about losing weight, getting healthy, and fitting in my bridesmaid dress in October. The more I think about Weight Watchers, the better I do. Coloring my tracker and carrying it in my purse, suing my Weight Watchers keychain, and always having my app handy to track on my phone KEEPS Weight Watchers on my mind and in my life. The more I pay attention to it, the more motivated I am.

Menu Plan Monday - July 14, 2014

Think I KILLED IT this past week in staying right at my Weight Watchers daily points. I ate like 1 weekly! Haven't done that in forever. Weigh in on Thursday and hopefully my awesome week will have awesome results.

Things we plan to eat this week:

  • Chicken breast in the crockpot smothered in cream of mushroom soup for 6-8 hours on low
  • Baked potato bar (carbs are my weakness)
  • Unsalads with pre-cooked beef fajita strips (I hate lettuce! Unsalad = veggies other than lettuce put in a bowl as a salad would be and topped with protein. PICTURED ABOVE!)
  • Fajitas with whole wheat or low-carb tortillas
  • Pizza Rolls (made the mistake of buying a case of these at Sam's Club... now have a lifetime supply)
  • Mexican Street Corn (or as I call it, "Crack")
  • BBQ Chicken Breast on the grill

Local Summer Fun and Deals Around Denton, Lewisville, and Fort Worth Texas

The hubby starts vacation on the 16th and we are doing a "staycation" due to the budget. Here are some local deals and coupons that are helping to stretch our fun money this summer.

Brunswick has a $9.99 weekday special before 3p.m. 2 hours of bowling, an individual pizza, a drink, 12 tokens, and shoe rental. Price is per person. We would visit the one in Denton, TX.

Groupon has a 1/2 price deal for a double feature at the Brazos Drive-In Theater on Friday or Sat. Price is $10 for up to 6 people for two movies. Movies start at 9pm. A two hour drive for us, but a BARGAIN and a cool experience. Sign up through my link HERE and I'll get a friend credit. :)

The Fort Worth Zoo has 1/2 price admission on Wednesdays. PRINT your tickets online before you go and take $5 cash for parking. The admission line can take you an hour. There is a special link for 1/2 price Wed tickets.

Going Bonkers in Lewisville, TX has weekly specials Monday through Friday after 4pm. This week they have admission, pizza, drinks, and tokens for my family of 5 for $29.99. Not too bad for dinner and fun!

Main Event in Lewisville had summer fun passes that include everything but games and food for $15.95 and $17.95. I think it is just on weekdays. Monday nights you can get unlimited arcade games for $9.95. Bowling, rock climbing, laser tag, billiards, gravity ropes, mini golf....

The Rainforest Café has 1/2 price kids meals with adult entrée purchases on Wednesdays. When I called the Grapevine, TX location they said it was all day, but you should call and make sure ahead of time. You might need a reservation on busy days to skip the line. I also found this coupon for a free appetizer, but they may not take it on Wednesdays. Worth a try!

Last but not least is this 1/2 price admission deal to Sharkarosa Wildlife Ranch from Groupon. They also have a Groupon for 1/2 off the Bear's Den, which is the restaurant there that opens up for dinner and searves gourmet pizza.
I LOVE GROUPON! So many deals for all over the US. Kids art classes, museum tickets, tours, vacations... Lots of great stuff. Don't forget to sign up through my link above if you buy a Groupon so I can get a friend credit and do something fabulous for free. :)

Homemade Dumplings & Yellowcake by Margo Lanagan

2 of 3 children and 1 husband helpe with dinner tonight. They peeled potatoes, sliced onions, cracked eggs, measured flour, stirred.... I love when the kids help and they BEG me to help almost every night. Usually I say no for safety reasons and limit it to 1 helper, but Grandma Gene's chicken and dumplings is simple enough for little hands.

Now that dinner is over and everyone is full and happy, I've retired to my room for some mommy time. Tonight I'm reading Yellowcake by Margo Lanagan. It's a collection of short horror stories from the teen section. I'm previewing it and if it's good and appropriate I'll be suggesting it to my 11-year-old.

Denton Civic Center Pool

We are officially worn out from a day of swimming at the Denton Civic Center Pool. We got some sunshine and some fun, and admission for a family of 5 was only $12.75. Hello bargain!

The only hard part was watching the fam eat nachos, hot dogs, and ice cream. I stuck with my sandwich in ziplock though and stayed strong! A huge step for me!

Lost 3.8 pounds this week. Gained 3.6 last week. This brings my weight loss total on Weight Watchers to 50.2 pounds. I've decided no more cheat days, as cheat days turn into cheat weeks.

Last night I read The River, start to finish in like two hours. It was that good.

Tonight I am reading Stolen by Vivian Vande Velde, another page turner. Both of these books are from the young adult section... I should be embarrassed to admit this, but I LOVE the books in the teen section so much more than books for adults. Oh well. :)

My Favorite Smell is a Page Turner

I'm serious when I say the my favorite smell is the library. I told the hubby that I WISHED our home smelled as good as this building full of paper and words. He said we only need a few more thousand books and we will have it nailed. Maybe. One. Day.

The children are tucked away in their beds and I am lost in this, The River by Mary Jane Beaufrand, such a page turner!
